Palo Cortado is considered one of the most complex sherry styles, as it uniquely combines two worlds: the refined structure and precision of an Amontillado with the power and oxidative depth of an Oloroso. This rare balance is clearly reflected in the character of the barrels.

During many years of maturation in the producing bodegas, Palo Cortado develops an exceptionally dense and nuanced aromatic profile. The barrels absorb intense nutty notes, dark dried fruits, caramel, delicate toasted aromas, and an elegant, dry spiciness. The sherry’s very dark color influence adds further depth and creates a pronounced yet well-balanced barrel impact.

Crafted from American oak, these barrels support the complex aromatics perfectly. The wood contributes structure, warmth, and subtle sweetness without overshadowing the dry, oxidative character of Palo Cortado. Thanks to the large 500-liter format, aroma transfer occurs slowly and in a controlled manner - ideal for long-term aging concepts focused on balance, stability, and sustainability.

After completion of sherry maturation, the barrels are transported directly from the bodegas to the cooperage of Casknolia in Andalusia. There, they are carefully inspected, professionally refurbished, and prepared specifically for shipment. This process ensures that every barrel meets the highest standards in terms of tightness, condition, and sensory performance.

These 500-liter Palo Cortado sherry barrels are ideally suited for the storage and aging of demanding spirits such as whisky, rum, and brandy. Barrel-aged beers and ciders also benefit from the nutty-oxidative complexity, structured depth, and warm oak integration that these casks impart to the aging product. They show their full potential especially in robust, long-term maturation projects.

These traditional Palo Cortado sherry barrels made from American oak are the perfect choice for producers seeking a large-format, highly complex sherry cask with clear provenance, exceptional aromatics, and versatile applications for spirits, beers, and cider - elegant, profound, and sensorially enduring.

FLAVOURS:

DOWNLOAD: Guidelines for Used Barrels

IMPORTANT NOTICE: Our products are exclusively sold to businesses or traders as defined by § 14 of the German Civil Code.
