These rebuilt barrels are crafted from original 225-liter Ice Wine casks sourced from Moldova and represent some of the rarest sweet wine barrels in our portfolio. The original casks were used to mature premium Ice Wine - one of the world's most exclusive and labor-intensive wine styles.
During maturation, the distinctive characteristics of Ice Wine became deeply embedded in the wood. Typical flavor notes include honey, candied fruits, apricot, ripe peach, and an elegant natural sweetness. These fruit-forward aromas are complemented by subtle vanilla and gentle spice notes contributed by the European oak.
Rebuilt into smaller 27 L, 55 L, or 110 L formats, these barrels deliver a significantly more active oak influence than the original large casks. The increased wood-to-liquid ratio promotes faster flavor extraction and makes them ideal for the maturation and finishing of whisky, rum, brandy, fruit spirits, as well as specialty beer and cider projects.
Each barrel is produced from carefully selected Ice Wine casks and professionally rebuilt to preserve the unique sweet wine character and exceptional aromatic potential of the original barrel.
