Cachaça differs in many ways from other spirits, particularly from rum. The main difference lies in the raw material: while rum is mainly distilled from molasses, a by-product of sugar production, cachaça is made from fresh sugarcane juice. This process gives cachaça a fresher and more vibrant character that sets it apart from the sweetness of rum.

A special aspect of cachaça production is the aging process in specific wooden barrels, which significantly influence the aroma and taste. While many spirits are aged in oak barrels, cachaça has a long tradition of using various types of wood. One of these is Amburana, a tropical tree native primarily to Brazil. Barrels made from Amburana wood are highly sought after due to their limited availability and the unique aromas they impart to the cachaça.

Aging in Amburana barrels gives cachaça a complex and distinctive aroma characterized by warm, sweet notes of cinnamon, vanilla, and caramel. Additionally, subtle hints of coconut, spices, and dried fruits develop, further enhancing the tasting experience. These barrels, available in very limited quantities, contribute to a rich and refined palette of flavors that is appreciated by both connoisseurs and enthusiasts alike.
