Following this, the barrels are filled with maple syrup for a period of 3 to 12 months. During this finishing stage, the natural sweetness of the syrup penetrates the wood and merges with the previously absorbed bourbon aromas. The result is a complex interplay of sweet maple notes, creamy vanilla, subtle bitterness, and the distinctive dryness of oak.
