These small-format Palo Cortado sherry barrels with capacities from 40 to 130 liters are an excellent choice for maturation projects where intensity, depth, and precise aroma control are essential. The barrels are crafted in the cooperage of Tonelería del Sur in Andalusia and are then deliberately seasoned with Palo Cortado sherry in nearby bodegas for a minimum of 12 to 18 months.

Palo Cortado is considered one of the rarest and most complex sherry styles. It uniquely combines the fine, elegant structure of an Amontillado with the oxidative depth and power of an Oloroso. This exceptional balance leaves a lasting imprint on the barrel wood and gives these casks an extraordinarily layered profile. Typical characteristics include a very dark color influence, pronounced nutty aromas, dried fruits, caramel, delicate toasted notes, and an elegant, dry spiciness.

American oak supports this aromatic profile perfectly by adding warmth, structure, and subtle sweetness without overshadowing the complex sherry influence. Due to the small barrel size, the ratio of wood surface to liquid volume is particularly high, allowing for rapid yet well-controlled aroma transfer. These barrels are therefore ideally suited for short to medium maturation periods as well as for targeted finishing projects.

Small Palo Cortado sherry barrels are highly versatile and perfectly suited for the storage and aging of a wide range of spirits, including whisky, rum, brandy, gin, and grain spirits. Barrel-aged beers and ciders also benefit significantly from the nutty-oxidative depth, dark fruit character, and structured oak integration that these casks impart to the aging product.
