These exclusive rebuilt casks made from 30–40-year-old Pedro Ximénez sherry barrels are among the most intense and characterful sweet wine barrels available at OAKBARRELS.SHOP. They are based on original PX sherry casks that were in continuous use for decades and are sourced directly from Andalusia. Thanks to their exceptionally mature oak, these barrels offer a truly unique aging potential.

The rebuilt barrels are professionally reconstructed at the renowned cooperage Tonelería del Sur. The distinctive character of the old oak is fully preserved throughout the process: decades of Pedro Ximénez seasoning have embedded deep, stable aromas into the wood, which remain intact after rebuilding. Once emptied, the barrels are seasoned again with Pedro Ximénez sherry to stabilize the aromatic profile and optimize them specifically for re-use.

Pedro Ximénez is one of the sweetest and most full-bodied sherry styles. It is defined by highly concentrated aromas of raisins, figs, dates, molasses, and dark caramel, supported by a syrupy texture and warm, lingering sweetness. Combined with very old oak, these rebuilt PX barrels deliver exceptionally dense, rounded, and long-lasting maturation profiles with outstanding aromatic penetration.

These rebuilt PX sherry casks made from mature oak are ideally suited for the storage and aging of premium spirits such as whisky, rum, and brandy.
