These exclusive barrels are produced by Toneleria del Sur in Andalusia and then filled with Sherry Cream for 12 to 18 months in the surrounding bodegas. Sherry types from oxidative aging (mainly Oloroso) are blended with Pedro Ximénez. The typical taste of the rather semi-dry sherries is enriched considerably with the sweetness of the PX.
